Sylvester Winery - Paso Robles
Halfway between San Francisco and Los Angeles
lies the Central Coast; an area blossoming in
vineyards and wineries which is producing some
of the most outstanding wines from California.
Paso Robles, one of the small towns in the area
and only 30 miles inland from the Pacific Ocean,
is home to Sylvester Winery.
The Austrian born owner, Mr. Sylvester Feichtinger,
chose Sylvester for the name of the winery because
it means "celebration" in his native language.
A long time resident of Paso Robles and Los Angeles,
he built the winery in 1996 on a section of the
430 acres purchased in the early 1960's. He is
a graduate of the Auckerbau and Obstbau Schule
in Ritzlhof, Austria, where early in his career,
Mr. Feichtinger became a winemaker specializing
in the production of fruit wines. He is actively
involved in agriculture food related businesses
including delicatessen meat and cheese distribution,
cattle, pistachio orchards and wine grape vineyards.
This has given him a real feel for the land as
well as an agriculture sense.
Currently, the winery produces Chardonnay, Cabernet
Sauvignon and Merlot with small quantities of
Zinfandel, Syrah, and Sangiovese. This Chardonnay
is fresh and crisp. The reds are the soft approachable
and very drinkable wines for which the Paso Robles
area is well known.
Total production is currently about 20,000 cases.
The wines are produced from the 150 acres of grapevines
on the ranch as well as from neighboring vineyards
in Paso Robles. The grapes are crushed and fermented
in the state of the art equipment at the facility
and then aged in fine oak barrels from around
the world until the wine is ready for bottling.
The label pictures the geese that visit the ranch
on their long journey. The names, Sylvester and
Kiara, span three generations of his family from
Sylvester himself to Kiara, his granddaughter,
once again reflecting the celebration of life.
At Sylvester Vineyards & Estate Winery all of
our blocks of grapes are harvested, crushed and
fermented separately to retain the distinctive
characteristics of the soil and the unique micro-climate
conditions of the Paso Robles Valley on the Central
California Coast.
When the conditions are just right and the time
comes to bottle the fermented harvest, our expert
wine makers take several blocks of wine and carefully
blend them together to provide Sylvester Estate
Wines with their exceptional flavor, complexity
and perfect balance for each vintage.

Sylvester Winery
Sylvester Chardonnay
Sylvester Chardonnay is light and crisp with soft,
ripe fruit notes, a smooth finish and full body.
It is a great wine to drink with meals. The Chardonnay
has been aged 10 months in oak barrels.
It is sensational with Smoked Salmon and Caviar
Appetizers, Caesar Salads and Fresh Chilled Gazpacho,
Barbecued Shrimp and Rotisserie Chicken, Fresh
Fruit Tarts and New York Cheese Cake.
Sylvester Cabernet Sauvignon
Sylvester Cabernet Sauvignon is complex yet well-balanced
with layers of flavors of berries and cherries,
it has been aged in oak barrels for 14 months.
This wine will continue to age well in the bottle
and will only get better with time.
The Cabernet Sauvignon is well-suited to complement
Caramelized Red Onion & Blue Cheese Tarts and
Country Black Pepper Terrine, Roasted Red Pepper
Soup and Seared Rare Steak Salad with Parmesan
Cheese Crisps, Grilled Wild Mushroom Stuffed Veal
Chop and Duck Leg Confit with Roasted Sliced Duck
Breast, Flourless Chocolate Cake and Black Walnut
Torte.
Sylvester Merlot
Sylvester Merlot is lightly laced with the flavors
of summer plums and cherries and balanced with
a background of warm oak notes. The Merlot is
aged in oak for 10 months.
It is ready to drink with Pate Foie Gras and French
Onion Soup, Beet Vinaigrette, Roasted Loin of
Venison and Lacquered Canton Duck, Assorted Cheese
and Fresh & Grilled Figs.
Sylvester Sangiovese
Sylvester Sangiovese is true love, Italian style-simply
flavored and balanced with oak. The Sangiovese
is aged in oak for 12 months.
Make an Italian feast with Prosciutto & Melon
and Traditional Antipasti, Caprese Salad and Pasta
Fagioli, Eggplant Stuffed Ravioli with Tomato
Mushroom Sauce and Slow-Roasted Osso Bucco, Pistachio
and Chocolate Stuffed Cannoli and Tiramisu.
Sylvester Syrah
Sylvester Syrah is a particularly well-balanced
wine, rich in fresh cherry and exotic chocolate
flavors, with toasted oak overtones. It is impressive
in its finesse. The Syrah is aged in oak for 10
months.
Sylvester Syrah goes well with rich flavorful
foods such as Wild Mushroom Ragout Turnovers and
Carpaccio of Ahi starters, Arugula with Shaved
Parmesan Cheese and Bursted Barley & Mushroom
Soup, Seared Filet Mignon and Grilled Atlantic
Sea Bass, Fresh Blackberry Cobbler and Chocolate
Mousse.
